Job Title: Child Nutrition Lead Cook Reports to: Cafeteria Manager Dept./School: Child Nutrition/Assigned Campus Exemption Status: Non-Exempt Primary Purpose: The Lead Cook is responsible for cooking and preparing food according to recipes and production guidelines while adhering to food safety, food handling, and sanitation procedures. The individual should safely handle knives and equipment such as ovens, steamers, tilt skillet, etc. The Lead Cook may be responsible for oversight or delegation of responsibilities within the culinary operation. Essential functions and responsibilities of the position may vary by location based on campus needs. The Lead Cook will ultimately be a support figure for the manager per location, while giving proper guidance and direction on Department standards revolving around food preparation and appearance. The Lead Cook must have availability for additional training and workshops. Qualifications: Education/Certification: Certified Food Manager (CFM) Special Knowledge/Skills/Abilities: Ability to understand written and verbal food preparation and safety instructions Working knowledge of kitchen equipment and food production procedures Ability to operate large and small kitchen equipment and tools Ability to perform basic math Experience: Experience as a cook or related role required Ability to work independently with limited supervision required Proven knowledge of the basic principles of food preparation, cooking methods, and food safety regulations such as proper food handling and sanitation Demonstrates effective interpersonal and communication skills, both written and verbal Major Responsibilities and Duties: Food Preparation and Serving 1. Prepare high quality food according to a planned menu of tested and uniform recipes. 2. Store and handle food items and supplies safely and according to established procedures. Maintain a clean and organized storage area. Safety and Sanitation 3. Operate tools and equipment according to prescribed safety standards and follow established procedures to meet high standards of cleanliness, health, and safety. 4. Keep garbage collection containers and areas neat and sanitary. 5. Correct unsafe conditions in work area and promptly report any conditions that are not immediately correctable to supervisor. 6. Maintain personal appearance and hygiene. 7. Help record food requisitions and order necessary supplies. 8. Maintain daily food preparation records. 9. Promote teamwork and interaction with fellow staff members. Supervisory Responsibilities: None.
